These juicy Melty Mozzarella Turkey Burgers Stuffed with Cheese and loaded with sweet potato and spices are simply delicious! Who says you need to top your turkey burger with cheese? These are stuffed like a Thanksgiving turkey, and it stays melted and gooey. Make these and the family will gobble them up!

Make the burgers in a large mixing bowl by kneading together ground turkey, egg, mashed sweet potato, red onion, and Southern Blend poultry seasoning with clean hands until ingredients are evenly distributed
Divide the ground turkey into 8 equal balls, flatten into ¼ inch thick patties, and set on a baking sheet.
Place a ¼-inch slice of Frigo® Whole Milk Mozzarella Cheese folded in half in the center of 4 of the patties and then top with the remaining 4 patties of meat. Pat the patties together with hands to seal the edges and form the meat into disks that are an even thickness. Season both sides generously with “Southern Blend” poultry seasoning. Set back on the baking sheet while you make the Creamy Ricotta Brussel Sprout Slaw and prepare your toppings.
Make the slaw in a small food processor or blender fitted with a blade. Pulse together Frigo® Whole Milk Ricotta Cheese, avocado, honey mustard, and juice and zest of clementine until smooth. Taste and add salt and pepper to taste.
In a large bowl, mix the Brussels sprouts, dried cranberries, roasted pepitas, and scallions. Pour the dressing over this mixture and toss to combine well. Allow to macerate in the refrigerator until ready to serve.
If cooking on the grill: Clean and oil and grates and heat grill to medium. If on the stove: Oil a cast iron skillet or grill pan and heat to medium high heat.
Place patties on your preheated oiled grill or cast iron skillet. Cover and cook about 4 minutes per side or until the center is cooked through and has an internal temperature of 165°F. In the last two minutes of cooking, top burgers with remaining slices of Frigo® Whole Milk Mozzarella Cheese cover and allow the cheese to melt as the burgers finish cooking.
Transfer to buns and place a liberal helping of slaw on top. Go ahead and add any of the optional toppings listed — especially the cranberry barbecue sauce! — or your favorite go-tos. Take a big bite and enjoy!
